Kimchi burger
A rich burger needs acidity and crunch. Kimchi supplies both, while a spicy burger sauce ties everything together.

Ingredients
- 300 g minced beef or 2 plant-based patties
- 2 burger buns
- 120 g kimchi, drained
- 2 cheese slices, optional
- 3 tbsp mayonnaise
- 1 tsp gochujang or hot sauce
- 1 tsp ketchup
- 1 tsp mustard
- A little neutral oil, salt, and black pepper

Method

Mix the mayonnaise, gochujang, ketchup, and mustard into a burger sauce, then set aside.

Shape two thin patties and season just before cooking. Prepare plant-based patties according to the packet.

Cook in a very hot pan for 2–3 minutes per side, then check that beef has reached 71°C in the centre and continue cooking if needed. Add cheese for the final minute if using.

Toast the cut buns briefly in the same pan.

Spread sauce over both halves of each bun, then add the patty and a generous amount of drained kimchi.
