Kimchi fries
Fries refusing to behave like a side dish. Kimchi cuts through the rich sauce and cheese; eat immediately and without dignity.

Ingredients
- 500 g frozen or homemade fries
- 150 g kimchi, well drained and chopped
- 100 g grated melting cheese
- 3 tbsp mayonnaise
- 1 tsp gochujang or hot sauce
- 1 tsp lime or lemon juice
- Spring onion and sesame
- Optional: crisp bacon, pancetta, or halal smoked beef

Method

Cook the fries until very crisp according to the packet or your trusted homemade method.

Mix the mayonnaise, gochujang, and citrus juice. Add a teaspoon of water for a looser sauce.

Spread the hot fries on a tray, cover with cheese, and return to the oven for 2–3 minutes to melt.

Add the kimchi only after baking so it stays fresh and crunchy.

Drizzle with sauce, add spring onion, sesame, and crisp bacon, pancetta, or smoked beef if using, then serve immediately.
